Isomerized Hop Pellets (Informational Only)

Preparation:addition of magnesium oxide to milled hops and heating after packaging
Major Role:to provide hop bitterness (? hop aroma) to beer
Method of Use:late addition to boiling wort in the kettle

COMPOSITION

Relative to hop powder pellets:
-most of the alpha acids are converted to the equivalent magnesium iso-alpha form.
-presence of magnesium and magnesium oxide
-slight reduction in beta acids content

ADVANTAGES

Relative to hop powder pellets:
-reduced requirement for cold storage
-increased utilization of alpha acids (55 - 60%)

DISADVANTAGES

Relative to hop powder pellets:
-undetermined effects on hop flavor and aroma in beer
-a "chemically processed" product
