Isomerized Hop Pellets

Preparation: addition of magnesium oxide to milled hops and heating after packaging
Major Role: to provide hop bitterness (? hop aroma) to beer
Method of Use: late addition to boiling wort in the kettle

 

Composition

Relative to hop powder pellets:
- most of the alpha acids are converted to the equivalent magnesium iso-alpha form.
- presence of magnesium and magnesium oxide
- slight reduction in beta acids content

 

Advantages

Relative to hop powder pellets:
- reduced requirement for cold storage
- increased utilization of alpha acids (55 - 60%)

Disadvantages

Relative to hop powder pellets:
- undetermined effects on hop flavor and aroma in beer
- a “chemically processed” product
